Preparation:

  1. Soak the dried beans in water overnight. Drain and rinse before cooking.
  2. Preheat the oven to 325°F (160°C).
  3. In a large Dutch oven, cook the pork over medium heat until browned on all sides. Remove and set aside.
  4. Add the sausage to the pot and cook until browned. Remove and set aside.
  5. Add the onion and garlic to the pot and sauté until softened, about 5 minutes.
  6. Stir in the tomato paste and cook for 2 minutes.
  7. Add the chicken broth, thyme, bay leaves, salt, and pepper to the pot.
  8. Add the pork, sausage, and beans to the pot and stir to combine.
  9. Place the duck confit legs on top of the mixture.
  10. Cover the pot and bake for 3 hours.
  11. Remove the cover and bake for an additional 30 minutes.
  12. In a small bowl, mix the breadcrumbs with the melted butter.
  13. Sprinkle the breadcrumbs over the top of the cassoulet and bake for an additional 15 minutes or until the top is golden brown.
