Classic Beef Bourguignon Recipe: Tender Meat in a Rich, Flavorful Sauce

  • 2 lbs. beef chuck roast, cut into 2-inch pieces
  • 6 slices of bacon, chopped
  • 1 large onion, chopped
  • 3 large carrots, chopped
  • 3 cloves of garlic, minced
  • 3 tbsp. all-purpose flour
  • 1 750-ml bottle of red wine (preferably Burgundy)
  • 2 cups beef broth
  • 2 tbsp. tomato paste
  • 2 sprigs of fresh thyme
  • 1 bay leaf
  • Salt and pepper, to taste
  • Chopped parsley, for garnish


  1. Preheat the oven to 325°F (165°C).
  2. In a large Dutch oven or oven-safe pot, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside.
  3. Season the beef with salt and pepper. Add the beef to the pot with the bacon fat and brown on all sides over medium-high heat, about 5-7 minutes. Remove the beef with a slotted spoon and set aside.
  4. In the same pot, add the chopped onions, carrots, and garlic. Sauté until the onions become translucent, about 5 minutes.
  5. Return the bacon and beef to the pot, and sprinkle the flour over the mixture. Stir until the flour is evenly distributed.
  6. Pour in the red wine and beef broth, and stir to combine. Add the tomato paste, thyme, bay leaf, and salt and pepper to taste. Bring to a boil.
  7. Reduce the heat to low, cover the pot, and simmer for 2 to 3 hours or until the beef is tender and the sauce has thickened. Stir occasionally and add more beef broth or water if needed to keep the meat covered.
  8. Discard the thyme sprigs and bay leaf. Taste the sauce and adjust seasoning as needed.
  9. Serve hot, garnished with chopped parsley, over a bed of mashed potatoes, pasta, or crusty bread.
