Ingredients:

  • 1 lb boneless mutton, cut into 1-inch cubes

  • 1 cup yogurt

Preparation:

  1. In a large pan, heat the oil over medium heat.
  2. Add the onions, ginger, and garlic and cook until the onions are soft and translucent, about 5 minutes.
  3. Add the pureed tomatoes and cook for another 5 minutes.
  4. Add the ground coriander, cumin, turmeric, paprika, red chili powder, garam masala, and salt and cook for another 2 minutes, stirring frequently.
  5. Add the mutton to the pan and stir to coat with the spice mixture.
  6. Pour in the yogurt and stir to combine.
  7. Reduce the heat to low, cover the pan, and let the mutton simmer for 45 minutes, or until the mutton is tender.
  8. Meanwhile, rinse the basmati rice in cold water and drain.
  9. In a separate pot, bring the water to a boil.
  10. Add the rice to the pot and let it cook for 10 minutes.
  11. Drain the rice and set it aside.
  12. In a large casserole dish, layer half of the cooked rice on the bottom.
  13. Top the rice with the cooked mutton mixture.
  14. Layer the remaining rice on top of the mutton.
  15. Cover the casserole dish with foil and bake in a preheated 350°F oven for 20 minutes.
  16. Serve the Mutton Biryani with fresh cilantro.
