- In a large pan, heat the oil over medium heat.
- Add the onions, ginger, and garlic and cook until the onions are soft and translucent, about 5 minutes.
- Add the pureed tomatoes and cook for another 5 minutes.
- Add the ground coriander, cumin, turmeric, paprika, red chili powder, garam masala, and salt and cook for another 2 minutes, stirring frequently.
- Add the mutton to the pan and stir to coat with the spice mixture.
