Preparation Method:

  1. For the Chole:
    • In a pan, heat oil and add cumin seeds. Once the seeds start crackling, add chopped onions and cook until golden brown.
    • Add ginger and garlic paste and cook for 2 minutes.
    • Add chopped tomatoes and cook until they are soft and mushy.
    • Add coriander powder, red chili powder, turmeric powder, and garam masala. Mix well and cook for 2 minutes.
    • Drain the soaked chickpeas and add them to the pan. Mix well and add enough water to cover the chickpeas. Let it come to a boil.
    • Reduce heat and let it simmer for 30 minutes or until the chickpeas are soft and cooked through.
    • Add salt, to taste.
  2. For the Bhature:
    • In a large bowl, mix together flour, yeast, sugar, salt, and oil.
    • Add water, little by little, and knead the dough until it’s smooth and elastic.
    • Cover the dough and let it rise for 2 hours.
    • Divide the dough into 10-12 equal parts and roll each part into a ball.
    • Roll out each ball into a circle about 4-5 inches in diameter.
    • Heat oil in a deep pan for deep-frying.
    • Deep-fry each rolled dough until golden brown and puffed up. Drain on paper towels.
