Authentic Al Pastor Recipe: A Flavorful and Spicy Twist on Tacos

  2. Remove the stems and seeds from the chilies and place them in a blender.
  3. Add the pineapple, garlic, cumin, oregano, paprika, cinnamon, salt, pepper, vinegar, and orange juice to the blender and puree until smooth.
  4. Pour the marinade over the pork and let it marinate in the refrigerator for at least 4 hours or overnight.


  1. Preheat the grill to high heat.
  2. Skewer the pork and pineapple alternating between them.
  3. Brush the skewers with oil and place them on the grill.
