Ingredients:

For the enchiladas:

  • 8 corn tortillas
  • 1 lb of cooked chicken, shredded

  • 1 tsp of dried oregano
  • 1/2 tsp of salt
  • 2 cups of chicken broth

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, heat the oil over medium heat and whisk in the flour until combined.
  3. Stir in the chili powder, cumin, garlic powder, oregano, and salt.
  4. Gradually whisk in the chicken broth and bring to a boil. Reduce heat to low and let simmer for 5-7 minutes, until the sauce has thickened.
  5. In a separate skillet, heat a small amount of vegetable oil over medium-high heat and fry the tortillas for 30-60 seconds on each side, or until slightly crispy.
  6. In a large mixing bowl, combine the shredded chicken, shredded cheese, chopped onion, and chopped bell pepper. Season with salt and pepper to taste.
  7. To assemble the enchiladas, place a spoonful of the chicken mixture onto each fried tortilla and roll up tightly.
  8. Pour the enchilada sauce into a 9×13 inch baking dish and place the rolled enchiladas seam side down on top of the sauce.
  9. Sprinkle any remaining cheese on top and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  10. Serve and enjoy!
