Vegetarian Pesto Pasta

Vegetarian Pesto Pasta is a delicious and healthy dish that is perfect for a quick and easy weeknight meal. It features tender pasta tossed in a flavorful pesto sauce made with fresh basil, garlic, pine nuts, and Parmesan cheese. The dish is topped with cherry tomatoes and a sprinkle of Parmesan cheese for added flavor and texture.


  • 8 oz of pasta (penne, fettuccine, or spaghetti)
  • 1/2 cup fresh basil leaves
  • 2 cloves of garlic
  • 1/4 cup pine nuts
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup extra-virgin olive oil
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved


  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a food processor, add the basil, garlic, pine nuts, Parmesan cheese, and pulse until finely chopped.
  3. Slowly pour in the olive oil while the food processor is running, until the mixture becomes smooth and creamy.
  4. Season with salt and pepper to taste.
  5. Toss the cooked pasta with the pesto sauce in a large bowl.
  6. Add the cherry tomatoes and toss to combine.
  7. Serve immediately, garnished with additional Parmesan cheese if desired.
