A savory and hearty dish made with lentils, breadcrumbs, and a variety of vegetables such as carrots, onion, and celery. The ingredients are combined and shaped into a loaf, then baked until golden brown. Served with a side of gravy or sauce.
Ingredients:
- 1 cup green or brown lentils
- 1 cup diced carrots
- 1 cup diced onion
- 1 cup diced celery
- 1 cup breadcrumbs
- 2 eggs
- 1/4 cup ketchup
- 2 tablespoons soy sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375 degrees F.
- Rinse the lentils and place them in a pot with enough water to cover. Bring to a boil, then reduce the heat and simmer for 20-25 minutes or until tender. Drain and set aside.
- In a pan, sauté the diced vegetables until they are tender.
- In a large bowl, combine the cooked lentils, sautéed vegetables, breadcrumbs, eggs, ketchup, soy sauce, thyme, salt, and pepper. Mix well.
- Grease a loaf pan and press the mixture into the pan.
- Bake for 45-50 minutes or until the top is golden brown. Let cool for a few minutes before slicing and serving.
