Vegetarian Lentil Loaf

A savory and hearty dish made with lentils, breadcrumbs, and a variety of vegetables such as carrots, onion, and celery. The ingredients are combined and shaped into a loaf, then baked until golden brown. Served with a side of gravy or sauce.

Ingredients:

  • 1 cup green or brown lentils
  • 1 cup diced carrots
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 cup breadcrumbs
  • 2 eggs
  • 1/4 cup ketchup
  • 2 tablespoons soy sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375 degrees F.
  2. Rinse the lentils and place them in a pot with enough water to cover. Bring to a boil, then reduce the heat and simmer for 20-25 minutes or until tender. Drain and set aside.
  3. In a pan, sauté the diced vegetables until they are tender.
  4. In a large bowl, combine the cooked lentils, sautéed vegetables, breadcrumbs, eggs, ketchup, soy sauce, thyme, salt, and pepper. Mix well.
  5. Grease a loaf pan and press the mixture into the pan.
  6. Bake for 45-50 minutes or until the top is golden brown. Let cool for a few minutes before slicing and serving.
