Vegetarian Tagine

Vegetarian Tagine is a traditional Moroccan dish that is hearty, flavorful, and perfect for a comforting meal. Tagine is a slow-cooked stew made with a variety of spices and vegetables, and it is typically served over couscous. This vegetarian version uses a variety of vegetables like eggplants, zucchini, and bell peppers, and it is flavored with a delicious blend of spices like cumin, paprika, and cinnamon.

To make Vegetarian Tagine, you will need:

  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground black pepper
  • 1 eggplant, diced
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 can of chickpeas, drained and rinsed
  • 1 can of diced tomatoes
  • 1/2 cup of vegetable broth
  • Salt, to taste
  • Fresh parsley, for garnish
  • Cooked couscous, for serving

Instructions:

  1. In a large pot or a tagine, heat the olive oil over medium heat. Add the onion and garlic and sauté for 5 minutes until the vegetables are softened.
  2. Add the ground cumin, paprika, cinnamon, and black pepper to the pot. Cook for 1-2 minutes until the spices are fragrant.
  3. Add the diced eggplant, zucchini, red bell pepper, chickpeas, diced tomatoes, and vegetable broth to the pot. Stir to combine.
  4. Bring the mixture to a simmer and let it cook, covered, for 30-40 minutes or until the vegetables are tender.
  5. Season with salt, to taste.
  6. Serve the tagine over cooked couscous and garnish with fresh parsley.
