Vegetarian Paella

Vegetarian Paella is a classic Spanish dish that is perfect for a hearty, comforting meal. It is a rice dish that is typically made with saffron, onions, garlic, peppers, tomatoes, and a variety of vegetables such as artichokes, peas, and mushrooms. The dish is often served with lemon wedges, and is typically garnished with fresh parsley or cilantro.

Ingredients:

  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 1 cup of Arborio rice
  • 1 teaspoon of paprika
  • 1/4 teaspoon of saffron threads
  • 3 cups of vegetable broth
  • 1 can of diced tomatoes
  • 1 cup of frozen peas
  • 1 cup of sliced mushrooms
  • 1 cup of chopped artichokes
  • 1/4 cup of chopped parsley
  • Salt and pepper to taste
  • Olive oil
  • Lemon wedges for serving

Directions:

  1. Heat 2 tablespoons of olive oil in a large paella pan or skillet over medium heat.
  2. Add the onion, garlic, and peppers and sauté for 5 minutes or until softened.
  3. Add the rice, paprika, and saffron and stir well to coat the rice with the oil and spices.
  4. Add the diced tomatoes and vegetable broth and bring to a boil.
  5. Reduce the heat to low, cover the pan and simmer for 15 minutes or until the rice is tender.
  6. Stir in the peas, mushrooms, and artichokes and cook for another 5 minutes.
  7. Season with salt and pepper to taste.
  8. Remove from heat and let it sit for a few minutes, covered.
  9. Garnish with fresh parsley and serve with lemon wedges on the side.
