Vegetarian Paella is a classic Spanish dish that is perfect for a hearty, comforting meal. It is a rice dish that is typically made with saffron, onions, garlic, peppers, tomatoes, and a variety of vegetables such as artichokes, peas, and mushrooms. The dish is often served with lemon wedges, and is typically garnished with fresh parsley or cilantro.
Ingredients:
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 red pepper, diced
- 1 yellow pepper, diced
- 1 cup of Arborio rice
- 1 teaspoon of paprika
- 1/4 teaspoon of saffron threads
- 3 cups of vegetable broth
- 1 can of diced tomatoes
- 1 cup of frozen peas
- 1 cup of sliced mushrooms
- 1 cup of chopped artichokes
- 1/4 cup of chopped parsley
- Salt and pepper to taste
- Olive oil
- Lemon wedges for serving
Directions:
- Heat 2 tablespoons of olive oil in a large paella pan or skillet over medium heat.
- Add the onion, garlic, and peppers and sauté for 5 minutes or until softened.
- Add the rice, paprika, and saffron and stir well to coat the rice with the oil and spices.
- Add the diced tomatoes and vegetable broth and bring to a boil.
- Reduce the heat to low, cover the pan and simmer for 15 minutes or until the rice is tender.
- Stir in the peas, mushrooms, and artichokes and cook for another 5 minutes.
- Season with salt and pepper to taste.
- Remove from heat and let it sit for a few minutes, covered.
- Garnish with fresh parsley and serve with lemon wedges on the side.
