Vegetarian Korma is a delicious and creamy Indian dish that is perfect for a cozy night in. Korma is a traditional Indian curry dish made with a variety of spices and a creamy sauce made from yogurt or cream. This vegetarian version uses a flavorful sauce made from coconut milk and various vegetables like potatoes, carrots, and peas.
To make Vegetarian Korma, you will need:
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 inch ginger, grated
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp ground turmeric
- 1 tsp ground cinnamon
- 1 tsp ground cardamom
- 1 tsp ground black pepper
- 2 potatoes, peeled and diced
- 2 carrots, peeled and diced
- 1 cup of frozen peas
- 1 cup of coconut milk
- Salt, to taste
- Fresh cilantro for garnish
- Cooked basmati rice for serving
Instructions:
- In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger, and sauté for 5 minutes until the vegetables are softened.
- Add the ground cumin, coriander, turmeric, cinnamon, cardamom, and black pepper to the pot. Cook for 1-2 minutes until the spices are fragrant.
- Add the diced potatoes, carrots, and frozen peas to the pot. Stir to coat the vegetables with the spices.
- Add the coconut milk and bring the mixture to a simmer. Let it cook for 15-20 minutes or until the vegetables are tender.
- Season with salt to taste.
- Serve the korma over cooked basmati rice and garnish with fresh cilantro.
