Vegetarian Korma

Vegetarian Korma is a delicious and creamy Indian dish that is perfect for a cozy night in. Korma is a traditional Indian curry dish made with a variety of spices and a creamy sauce made from yogurt or cream. This vegetarian version uses a flavorful sauce made from coconut milk and various vegetables like potatoes, carrots, and peas.

To make Vegetarian Korma, you will need:

  • 2 tbsp vegetable oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 inch ginger, grated
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground turmeric
  • 1 tsp ground cinnamon
  • 1 tsp ground cardamom
  • 1 tsp ground black pepper
  • 2 potatoes, peeled and diced
  • 2 carrots, peeled and diced
  • 1 cup of frozen peas
  • 1 cup of coconut milk
  • Salt, to taste
  • Fresh cilantro for garnish
  • Cooked basmati rice for serving

Instructions:

  1. In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger, and sauté for 5 minutes until the vegetables are softened.
  2. Add the ground cumin, coriander, turmeric, cinnamon, cardamom, and black pepper to the pot. Cook for 1-2 minutes until the spices are fragrant.
  3. Add the diced potatoes, carrots, and frozen peas to the pot. Stir to coat the vegetables with the spices.
  4. Add the coconut milk and bring the mixture to a simmer. Let it cook for 15-20 minutes or until the vegetables are tender.
  5. Season with salt to taste.
  6. Serve the korma over cooked basmati rice and garnish with fresh cilantro.
