Vegetarian Gumbo is a classic Creole dish that is hearty, flavorful, and perfect for vegetarians and vegans. This dish is made with various vegetables such as okra, bell pepper, onion, and celery and is simmered in a flavorful roux-based broth. It’s typically served over rice and is a comforting and satisfying meal.
Ingredients:
- 1 tbsp vegetable oil
- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 cups vegetable broth
- 1 can diced tomatoes
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/4 tsp cayenne pepper
- 1 cup sliced okra
- 1 can kidney beans, rinsed and drained
- Salt and pepper, to taste
- Cooked rice for serving
Instructions:
- Heat the vegetable oil in a large pot over medium heat.
- Add the onion, bell pepper, celery, and garlic. Cook for 5-7 minutes or until the vegetables are tender.
- Stir in the flour and cook for 1-2 minutes, stirring constantly.
- Gradually add the broth, diced tomatoes, thyme, oregano, and cayenne pepper and stir until well combined.
- Bring the mixture to a simmer and cook for 10-15 minutes or until the mixture thickens.
- Add the okra and kidney beans and cook for an additional 5-7 minutes.
- Season the gumbo with salt and pepper to taste.
- Serve the gumbo over cooked rice.
