Vegetable Fried Rice

Vegetable Fried Rice is a popular dish consisting of rice that has been stir-fried with various vegetables and seasonings. It is a quick and easy dish to make, and it is a great way to use up any leftover rice and vegetables you may have in the fridge. It is also a great dish for vegetarians and people who prefer to eat less meat.

Ingredients:

  • 2 cups cooked white or brown rice
  • 2 tbsp vegetable oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 1 cup diced bell pepper
  • 2 eggs, lightly beaten (optional)
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • Salt and pepper to taste
  • Green onions, chopped (optional)

Instructions:

  1. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  2. Add the onion and garlic and cook until softened.
  3. Add the carrots, peas, and bell pepper, and cook for a few minutes.
  4. If using, push the vegetables to the sides of the skillet and add the beaten eggs to the center. Cook until set, then scramble and mix with the vegetables.
  5. Add the cooked rice to the skillet and stir to combine.
  6. Stir in the soy sauce and sesame oil.
  7. Cook, stirring occasionally, until the rice is heated through and the vegetables are tender.
  8. Season with salt and pepper to taste.
  9. Serve immediately, garnished with green onions if desired.
