Vegetable and Tofu Pad Thai is a flavorful and healthy dish that is perfect for vegetarians and vegans. It is a traditional Thai dish made with a variety of vegetables and tofu, stir-fried with rice noodles, and a savory peanut sauce.
Ingredients:
- 8 oz rice noodles
- 1 block of firm tofu, pressed and cut into cubes
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup sliced mushrooms
- 2 cloves of garlic, minced
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 2 tablespoons lime juice
- 1 tablespoon red curry paste
- 1/4 cup chopped peanuts
- 2 green onions, thinly sliced
- cilantro leaves, for garnish
For the peanut sauce:
- 1/4 cup creamy peanut butter
- 1/4 cup water
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon brown sugar
- 1 teaspoon sesame oil
- 1 teaspoon red pepper flakes
Instructions:
- Cook the rice noodles according to package instructions, then drain and set aside.
- In a small bowl, mix together the ingredients for the peanut sauce.
- Heat the oil in a large pan or wok over medium-high heat. Add the garlic and stir-fry for 30 seconds.
- Add the bell peppers, mushrooms, and tofu and stir-fry for 3-5 minutes or until the vegetables are tender.
- Add the soy sauce, brown sugar, lime juice, and curry paste and stir-fry for another 2-3 minutes.
- Add the cooked noodles and peanut sauce and stir-fry for 2-3 minutes.
- Remove from heat and garnish with chopped peanuts, green onions, and cilantro.
