Vegetable and Bean Burritos

Vegetable and Bean Burritos are a delicious and satisfying meal that can be enjoyed for breakfast, lunch or dinner. It’s a combination of sautéed vegetables, beans, and cheese wrapped in a warm flour tortilla. These burritos are a great option for vegetarians, vegans, and people who are looking for a tasty and healthy meal.

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels
  • Salt and pepper, to taste
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/4 cup sour cream (optional)
  • 1/4 cup salsa (optional)

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion, bell pepper, garlic, cumin, and chili powder. Cook for 5-7 minutes or until the vegetables are tender.
  3. Stir in the black beans, corn, salt and pepper. Cook for an additional 2-3 minutes.
  4. Lay the flour tortillas on a work surface.
  5. Divide the bean and vegetable mixture among the tortillas.
  6. Sprinkle shredded cheese over the top of the mixture
  7. Roll the tortillas to enclose the filling.
  8. Heat a large skillet over medium-high heat.
  9. Place the burritos in the skillet and cook for 1-2 minutes per side or until they are golden brown and crispy.
  10. Serve with sour cream and salsa (if desired).
