Vegetable and Bean Burritos are a delicious and satisfying meal that can be enjoyed for breakfast, lunch or dinner. It’s a combination of sautéed vegetables, beans, and cheese wrapped in a warm flour tortilla. Ingredients:
- 1 tbsp olive oil
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1 can black beans, rinsed and drained
- 1 cup corn kernels
- Salt and pepper, to taste
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1/4 cup sour cream (optional)
- 1/4 cup salsa (optional)
Instructions:
- Heat the olive oil in a large skillet over medium heat.
- Add the onion, bell pepper, garlic, cumin, and chili powder. Cook for 5-7 minutes or until the vegetables are tender.
- Stir in the black beans, corn, salt and pepper. Cook for an additional 2-3 minutes.
- Lay the flour tortillas on a work surface.
- Divide the bean and vegetable mixture among the tortillas.
- Sprinkle shredded cheese over the top of the mixture
- Roll the tortillas to enclose the filling.
- Heat a large skillet over medium-high heat.
- Place the burritos in the skillet and cook for 1-2 minutes per side or until they are golden brown and crispy.
- Serve with sour cream and salsa (if desired).
