- 4 potatoes, peeled and diced
- 6 strips of bacon, diced
- 4 eggs
- Salt and pepper, to taste
- Optional: diced onion, chopped parsley
- In a large skillet over medium-high heat, cook the bacon until crispy.
- Add the diced potatoes to the skillet and cook, stirring occasionally, until the potatoes are tender and golden brown.
- Crack the eggs into the skillet and cook to your desired doneness.
- Season with salt and pepper, to taste.
- Optional: add diced onion and cook until softened, or sprinkle with chopped parsley before serving.
