Lentil Soup

Lentil soup is a hearty and comforting dish that is perfect for a cold winter evening. It’s a healthy and delicious way to get in your daily dose of protein and fiber. The dish is made by cooking lentils in a flavorful broth with vegetables such as onions, carrots, and celery. It can be served with bread or crackers.

Ingredients:

  • 1 cup green lentils
  • 6 cups vegetable broth
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 tablespoon olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Optional: fresh herbs, such as parsley or cilantro, for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery and sauté for 5 minutes or until softened.
  2. Add the garlic, cumin, and smoked paprika and sauté for 1 minute.
  3. Add the lentils and broth, bring to a boil, then reduce the heat and let it simmer for about 30 minutes or until the lentils are tender.
  4. Season with salt and pepper to taste.
  5. Serve the soup in bowls and garnish with fresh herbs if desired.
  6. Enjoy with bread or crackers.
