- 1 cup green lentils
- 6 cups vegetable broth
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 tablespoon olive oil
- 2 cloves of garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- Optional: fresh herbs, such as parsley or cilantro, for garnish
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery and sauté for 5 minutes or until softened.
