Käseschnitzel

Käseschnitzel is a traditional German dish that features a breaded and fried cutlet topped with a rich and creamy cheese sauce. This dish is typically made with veal or pork cutlets but can also be made with chicken or turkey. It’s a comforting and satisfying meal that is perfect for a weeknight dinner or a special occasion.

Ingredients:

  • 4 veal or pork cutlets, pounded to an even thickness of about 1/4 inch
  • 1 cup flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Salt and pepper, to taste
  • Oil, for frying
  • 1 cup heavy cream
  • 1 cup grated Emmental cheese
  • 1 cup grated Gruyere cheese
  • 1 tbsp butter
  • 2 tbsp flour
  • Salt and pepper to taste

Instructions:

  1. Place the flour, beaten eggs, and breadcrumbs in three separate shallow dishes.
  2. Season the flour with salt and pepper.
  3. Dip the cutlets in the flour, then the eggs, and finally the breadcrumbs, making sure to coat each piece evenly.
  4. Heat the oil in a pan over medium-high heat.
  5. Once the oil is hot, add the breaded cutlets and cook for 2-3 minutes on each side until golden brown and crispy.
  6. Remove the cutlets from the pan and place on a paper towel-lined plate to drain off excess oil.
  7. In a separate saucepan, melt the butter over medium heat.
  8. Whisk in the flour and cook for 1-2 minutes.
  9. Gradually stir in the cream and bring the mixture to a simmer.
  10. Stir in the grated Emmental and Gruyere cheese, and cook until the cheese is melted and the sauce is thickened.
  11. Season the cheese sauce with salt and pepper to taste.
  12. Serve the cutlets with the cheese sauce on top.
