Grüne Spätzle

Ingredients:

  • 2 cups of all-purpose flour
  • 3 large eggs
  • 1/2 cup of water or milk
  • 1 tsp of salt
  • 1 cup of finely chopped spinach or parsley
  • 2 tablespoons of butter
  • Salt and pepper to taste

Instructions:

  1. In a large mixing bowl, combine the flour, salt, and chopped spinach or parsley.
  2. Make a well in the center of the flour mixture and add the eggs and water or milk. Mix until the dough comes together.
  3. Knead the dough for about 5 minutes on a floured surface until smooth and elastic.
  4. Cover the dough and let it rest for at least 30 minutes.
  5. Bring a large pot of salted water to a boil.
  6. Press the dough through a Spätzlehobel or Spätzle press into the boiling water.
  7. Cook the Spätzle for about 2-3 minutes or until they float to the surface.
  8. Remove the Spätzle from the water using a slotted spoon and drain them well.
  9. In a large skillet, melt the butter over medium heat.
  10. Add the cooked Spätzle to the skillet and toss to coat with the butter.
  11. Season with salt and pepper to taste.
  12. Serve immediately and enjoy!
