Tiella di patate, also known as potato and rice pie, is a traditional dish from the Calabria region of Italy; it is a layered dish that typically features potatoes, rice, and vegetables such as tomatoes, onions, and peppers. It is baked in the oven until golden brown, and the flavors are melded together. It can also include meat or fish, such as sausage or anchovies.
Ingredients:
- 2 cups of cooked short-grain rice
- 2 cups of thinly sliced potatoes
- 1 cup of diced tomatoes
- 1 cup of diced onions
- 1 cup of diced bell peppers
- 1/2 cup of grated Pecorino cheese
- 1/4 cup of chopped parsley
- 1/4 cup of olive oil
- Salt and pepper to taste
Instructions:
- Preheat the oven to 350F (180C).
- Mix the rice, potatoes, tomatoes, onions, bell peppers, Pecorino cheese, parsley, olive oil, salt, and pepper in a large bowl.
- Grease a baking dish and lay half the rice and potato mixture at the bottom.
- Repeat the layering with the remaining mixture.
- Cover the dish with foil and bake for about 45 minutes.
- Remove the foil and bake for an additional 15 minutes or until the top is golden brown.
- Let it cool for a few minutes before serving.
Note: You can also add some sausage or anchovies to the dish for more flavor and adjust the seasoning to your taste.
