Salsiccia e Friarielli

Salsiccia e Friarielli is a traditional dish from the southern Italian region of Calabria. It is a dish typically made with salsiccia, which is Italian sausage, and friarielli, which is a type of wild broccoli. The dish is typically made by sautéing the sausage and friarielli in olive oil with garlic, chili pepper, and pecorino cheese. The dish is hearty, flavorful, and perfect for cold weather.

Ingredients:

  • 1 lb of salsiccia, sliced
  • 2 cups of friarielli, washed and chopped
  • 2 cloves of garlic, minced
  • 1 tsp of chili flakes
  • 1/4 cup of grated Pecorino cheese
  • 1/4 cup of olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add garlic and chili flakes, and sauté for about 1 minute or until fragrant.
  3. Add the salsiccia and sauté for about 5 minutes or until browned.
  4. Add the friarielli and sauté for about 5 minutes or until wilted.
  5. Stir in the Pecorino cheese, salt, and pepper, and sauté for another 1-2 minutes.
  6. Serve hot, and enjoy.
