Riso, Patate e Provola is a traditional Italian dish that translates to “rice, potatoes, and provola cheese.” It is a hearty and flavorful dish made with a combination of sautéed onions, garlic, potatoes, rice, and provola cheese. Provola is a type of Italian cheese that is similar to mozzarella but with a stronger and smokier flavor. The dish is typically made with short-grain rice and is finished with a sprinkle of parsley.
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 potatoes, peeled and diced
- 1 cup short-grain rice
- 2 cups chicken broth
- 1/2 cup grated provola cheese
- Salt and pepper, to taste
- Chopped fresh parsley for garnish
Instructions:
- Heat the olive oil over medium heat in a large pot or Dutch oven. Add the onion and garlic and cook until softened.
- Add the potatoes and rice and stir to coat with the oil.
- Pour in the chicken broth, and bring to a simmer.
- Reduce the heat to low, cover the pot and cook for about 15 minutes or until the rice and potatoes are almost done.
- Remove the pot from heat and stir in grated provola cheese, stirring until the cheese is melted and well combined.
- Season the dish with salt and pepper to taste.
- Ladle the dish into bowls and garnish with fresh parsley.
