Porchetta Toscana is a traditional Italian dish made from a pork roast that is seasoned with herbs and spices, rolled and slow-roasted until tender and flavorful. The dish originates from the central region of Tuscany and is typically served as a main course for special occasions or holidays.
Ingredients:
- 2-3 lb pork shoulder roast (skin on)
- 2 cloves of garlic, minced
- 2 tbsp of chopped fresh rosemary
- 2 tbsp of chopped fresh thyme
- 2 tbsp of chopped fresh sage
- 1 tsp of fennel seed
- 1 tsp of salt
- 1 tsp of black pepper
- 1/4 cup of olive oil
Instructions:
- Using a sharp knife, make small incisions all over the pork shoulder roast and set aside.
- Mix the garlic, rosemary, thyme, sage, fennel seed, salt, and pepper in a small bowl.
- Rub the mixture all over the pork roast, making sure to get the mixture into the incisions.
- Roll the pork roast up and tie it with kitchen twine to keep it together.
- Preheat the oven to 350°F.
- Place the pork roast, skin side up in a roasting pan, and brush with olive oil.
- Roast for about 2-3 hours, or until the internal temperature reaches 145°F.
- Remove from the oven and let it rest for about 15 minutes before slicing.
- Serve with a sprinkle of salt and any additional herbs if desired.
Note: You can add vegetables like onions or carrots to the roasting pan for flavor and nutrition. Also, you can use a meat thermometer to check the internal temperature of the pork roast; this will ensure that it is cooked to perfection.
