Cassata is a dessert typically made with a round sponge cake or pastry dough base layered with sweetened ricotta cheese, candied fruits, and chocolate chips. The cake is then coated with a layer of marzipan or fondant and decorated with candied fruit and chocolate. Some variations also include layers of gelato or ice cream. The name “cassata” comes from the Arabic word “qas’at”, which means “bowl,” referring to the round shape of the dessert. Cassata is often served at special occasions such as weddings and Easter celebrations. It is a sweet and creamy dessert that is perfect for those with a sweet tooth.
Ingredients:
- 1 pound of sweetened ricotta cheese
- 1/2 cup granulated sugar
- 1/4 cup candied fruit (such as orange peel, lemon peel, or cherries)
- 1/4 cup chocolate chips
- 1 sponge cake (store-bought or homemade)
- 1/4 cup maraschino liqueur or fruit juice
- 1/4 cup chopped toasted almonds (optional)
- Whipped cream for garnish (optional)
Instructions:
- In a medium bowl, mix together the ricotta cheese and sugar until smooth.
- Fold in the candied fruit and chocolate chips.
- Cut the sponge cake into 1/4-inch slices, and use them to line the bottom and sides of a loaf pan or springform pan.
- Brush the sponge cake with the maraschino liqueur or fruit juice.
- Spread half of the ricotta mixture over the sponge cake, spreading it evenly.
- Repeat the process with another layer of sponge cake and the remaining ricotta mixture.
- Cover the top of the cake with plastic wrap and refrigerate for at least 2 hours, or overnight.
- Before serving, remove the plastic wrap, and run a knife around the edges of the pan to loosen the cake. Release the sides of the pan.
- Garnish the top of the cake with toasted almonds (if using) and whipped cream (if desired)
- Slice and serve the Cassata chilled.
