Pasta con le Sarde

Pasta con le Sarde, also known as “pasta with sardines,” is a dish that combines pasta with sardines, wild fennel, raisins, and pine nuts. Ingredients:

  • 1 pound spaghetti
  • 1/4 cup olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup canned crushed tomatoes
  • 1/2 cup dry white wine
  • Salt and pepper to taste
  • 1/4 cup raisins
  • 1/4 cup pine nuts
  • 1/4 cup chopped fresh parsley
  • 2 sardines, cleaned and boned
  • 1/4 cup bread crumbs

Instructions:

  1. Cook the spaghetti according to the package instructions until al dente. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened.
  3. Add the red pepper flakes and cook for another minute.
  4. Stir in the canned tomatoes and white wine, and season with salt and pepper to taste. Bring the mixture to a simmer and cook for 10 minutes.
  5. Stir in the raisins and pine nuts and cook for another 5 minutes.
  6. Remove the skillet from the heat and stir in the chopped parsley.
  7. Add the sardines and bread crumbs to the skillet and mix well.
  8. Toss the pasta with the sardine sauce, and serve immediately.
